Gum paste cutters make it easy to produce a clean cut edge. For easy release, lightly coat edge of cutter with vegetable shortening. Press straight down, using firm pressure. Do not move cutter back and forth, as this may give petals a smaller shape. To remove the cut shape, lift off excess gum paste around it first, then use a toothpick or pointed veining tool to remove the petal from the smooth surface.
